Open Faced Tempeh Toasty

Tempeh is one of my favorite meat substitutes. It seems to have a little more substance to it then tofu and actually has more nutritional benefits to it as well. The soybean based food is packed with fiber, protein, fatty acids and vitamins. This recipe is a great for when you are in a pinch but looking for a wholesome sandwich without the overload of bread.

Ingredients (For one toasty.)

  • 1/3 Package of tofu, sliced in three 1/2 inch strips.
  • 2 Tsp of soy sauce (Use gluten-free soy sauce if you are gluten intolerant.)
  • 4 tsp of water
  • A generous few dashes of ginger
  • 1/2 tsp of garlic purred
  • Spinach
  • Gluten-free toast
  • Garlic aioli

Create the marinate by combining soy sauce, water, ginger, garlic and tempeh. Let it sit for 10-20 minutes. Heat a pan on medium. Then saute the tempeh with the marinade for 5 minutes on each side. Meanwhile toast your bread, apply garlic aioli and spinach. Once tempeh is cooked and brown on both sides, place on top of the spinach and enjoy the perfect dose of sandwich.

I was running late for work, so I wasn’t able to saute mushrooms to add-on top, but it would be an excellent addition. I also recommend some steamed veggies as a friendly companion.
